-the term used to describe food that is hand produced. Tastes and processes, such as fermentation, are allowed to develop slowly and naturally, rather than curtailed for mass-production.

-there are many styles, shapes and types of pizza. To name a few: Neapolitan, Sicilian, Roman, Chicago, Detroit, New York and so on. HII PIE is creating an Arizona style with a mission of carefully and thoughtfully sourcing the best ingredients, local or made in house when possible.

The Goal

to create the best tasting pizza, this starts with a solid foundation.

Flour is hand selected expertly milled grain. The dough is carefully fermented for 72 hours resulting in a more digestible pizza. The fermentation process creates a higher protein while breaking down the glutens. The dough is made with minimal ingredients, Flour, Water, Salt and Love. 

Plum Tomatoes are organic, California grown, field ripened and canned at the peak of summer harvest so they can be enjoyed year-round.

EVOO is cold pressed from a select combination of California olives resulting in a fruity, grassy, peppery finish that is clean, fresh and bright.
